For as long as I can remember growing up, getting an almond pillow cookie out of the cookie case at Fresh Market was always one of my favorite treats. Its a perfectly baked cookie, stuffed with an amazing almond paste filling, and topped with just enough powdered sugar. I introduced Ryan to these cookies few months back, and ever since, my addiction has started up again. I never thought I’d be able to re-create the cookie at home, but after some research (and some much enjoyed taste testing), I found this recipe to be a surprisingly close resemblance to the real thing.
