It’s no secret how much I love pizza. When I made my first homemade one about a year ago, I became officially hooked. In an effort to eat less pizza and pasta, I’ve been avoiding whipping them up. At least until I saw this recipe online. I somehow convinced myself that because there was green on it, it was ‘healthy’. Regardless of how good or bad it was for me, this pizza is one of the most indulgent I’ve ever had, and these toppings will definitely be incorporated more into my pizza rotation.
Ingredients
See ingredients for basic pizza crust here (or use store bought)
1/2 cup of your favorite pesto
1 cup chopped spinach
1 cup chopped artichoke hearts, use jarred or canned and drain them
1 cup shredded mozzarella cheese
1/2 cup shredded parmesan cheese
Recipe
Preheat oven to 450 degrees F.
Make pizza crust using instructions here. Coat lightly with olive oil, then spread pesto as you would pizza sauce. Top with cheeses, spinach, and artichoke hearts.
Bake for 18-20 minutes. Let cool for a few minutes before slicing.
