Other than a cheese plate, one of my favorite snacks to throw together is a basic bruschetta with fresh tomatoes, basil, and mozzarella. It’s a perfect quick and easy recipe that you can serve if you need to throw something together for a dinner party. I particularly love severing this in the warmer months – sometimes I’ll consider it my main course. It only takes about 10 minutes of prep time, and then you have a ready to go snack that looks a lot fancier than it really is!
Ingredients
Fresh mozzarella cheese, sliced
Fresh basil, cut into strips
French Baguette, cut diagonally into 1/2″ thick slices
Roma tomatos (I needed two), chopped
Olive oil
Balsamic Glaze (I found mine at Trader Joes, but you can make your own my mixing balsamic vinegar and brown sugar)
Recipe
Preheat oven to 450 degrees F. Coat one side of the baguette with olive oil, placing the coated side face down on a baking sheet. Repeat with all bread slices, then bake for about 5-6 minutes, until edges have just started to turn golden.
Remove from oven and allow to cool slightly. Olive oil side up, place your cheese, fresh tomato, and basil. Drizzle glaze over and serve.
